Simple, sophisticated and delicious cuisine
The chef Guillaume Royer finds it easy when he’s asked to describe his cuisine: quality ingredients which are skilfully cooked and deliciously seasoned for incredible flavour.
Expect precision, technical expertise and sophisticated presentation (for diners’ visual pleasure) from the dishes created by this Meilleur Ouvrier de France who has worked at some of France’s most prestigious Michelin-starred restaurants.
Having grown up in this village in Burgundy, he never forgets the importance of the generosity of this region he loves so much and a subtle, delicate touch, both in terms of his dishes and their aesthetics, all to create genuinely heartfelt cuisine, inspired by the very best ingredients.
A love of quality ingredients
As the driving force behind his restaurant, Guillaume Royer works to enhance the ingredients which serve as his inspiration.
With his focus on traceability and sourcing the very best ingredients, sparked by his memories of his grandparents’ farm and his discussions with some of France’s greatest chefs, the chef is well aware that nature sets the tone. Accordingly, the dishes at L’Auberge de Guillaume vary with the seasons and availability, paying homage to this fertile land.
His suppliers, some of whom he counts as friends, also provide the chef with guidance as he creates his gourmet dishes.
